My seven veils

non sono riuscita a resistere!! dopo una lunga ricerca tra blog e forum sono riuscita a fare questa torta spettacolare!!! leggermente...ipercalorica! ma dovevo pur farmi un regalo al mio compleanno! la ricetta l'ho presa qui  la mousse al cioccolato presa da  qui  mentre il cioccolato di copertura presa da I pasticci dello Ziopiero ....ho fatto delle modifiche...ed ora la ricetta:

in ordine di preparazione ma non di composizione...

Pan di Spagna al cioccolato
Bavarese alla nocciola
Mousse Dark chocolate
Disco Velo Chocolate Crispy

Sponge chocolate about 22 cm
00 100 grams of flour 50 g potato starch or cornstarch
1 egg + 3 egg yolks 250 gr sugar

80 g butter 50 g cocoa powder 200 grams of milk
1 packet of yeast

whisk the eggs with sugar until the mixture becomes clear and fluffy.
has cooled, add melted butter, flour, starch, cocoa, baking powder.
mix well and add the warm milk. oven at 160 degrees for 30-40 minutes.
bake and let cool well ... better do it one day before .... that is, two days before serving the cake.

Bavarian Hazelnut
6 egg yolks 120 gr sugar
3 sheets of gelatin (gelatin)
200 ml of whipping cream
5 tablespoons of hazelnut paste. .... 250 g of hazelnut cream blend to become one!
1 tablespoon cornstarch or cornstarch
500 ml of milk

Beat the egg yolks with sugar until it is white and fluffy.
add cornstarch. Wire pour the milk tiepido. mettere i fogli di gelatina in ammollo.

  Mousse al cioccolato
3 uova fesche a temperatura ambiente
100 gr di cioccolato fondente

sciogliere il cioccolato fondente. aggiungere due tuorli mescolare bene poi l'ultimo tuorlo mescolare ancora....se si indurisce un po' niente paura mettete la ciotola di nuovo a bagnomaria e mescolate con forza....a me è capitato quando ho aggiunto i primi due tuorli che non erano a temperatura ambiente!!!
montare gli albumi a neve molto ferma....unirli delicatamente e in più riprese al cioccolato.

Velo al cioccolato
175 gr acqua
150 gr panna
225 gr zucchero
75 gr cacao amaro
8 gr colla di pesce ammollata in acqua fredda
unire zucchero e cacao....aggiungere l'acqua e la panna. mescolare bene in modo da non formare grumi. mettere in un pentolino a fuoco dolce....appena comincia il bollore la temp. deve arrivare sui 103°) spegnere la fiamma e far raffreddare (temp. 50°). non avendo il termometro mi sono regolata cosi...103° appena comincia il bollore....50° assaggio con scottatura :P....appena I cooked wring the gelatin and add to it all. wait cool .... but I suggest you prepare it the day before covering the cake because I noticed that cold better cover the sides of the cake .... if just slightly warm.

130 grams of dark chocolate .... but also 150)
100 grams of hazelnuts and almonds without the skins
3 biscuits type Grancereale
a spoonful of rum or rum essence (not mandatory but is so delicious)

melt the chocolate. Coarsely chop almonds, toasted hazelnuts and biscuits.
combine everything.

Composition

then:
  • take a mold of sponge cake .... possibly hinged cover and sides with acetate in excess of the edge of the mold. Is not to attack the cake.
  • split the sponge cake into 3 disks. with a calm that is very soft! the first should be of normal thickness the other two were the same thin ... my all three (or at least that was my intention!)
  • inserire il primo disco come base. non l'ho bagnato era già umido e morbido.
  • mettere la base croccante. stendere questa base direttamente sul pan di spagna. è molto più facile che fare il disco a parte. attenta allo spessore....che sia omogeneo! lasciar raffreddare un po' in frigo.
  • riprendere lo stampo e fare uno strato di bavarese alla nocciola...metà bavarese perchè gli strati sono due. lasciare in frigo per un po'....un po' sta per...20/30 minuti...ma c'è anche chi non lo fa,  la compone tutta e la mette in frigo.
  • altro disco di pan di spagna
  • aggiungere l'altra metà di bavarese alla nocciola e riporre in frigo per un po' ;P

  • a layer of chocolate mousse
  • let stand in refrigerator at least 1 night or in the freezer for a few hours.
  • now .... take a grill with a tray below. I used the microwave. put a bowl on the grill small but strong, must bear the weight of the cake.
  • remove the cake from the mold. remove the acetate.
  • place the cake on the bowl and wash the layer of chocolate. let cool a bit 'and again until the icing chocolate cake is not fully covered!
the only advice that I feel I give you is this .... it at least two! then it freezes well!
